Preparation of Mackerel

    Grilling the Mackerel

    Preheat the grill to medium-high heat. Rub the mackerel fillets with olive oil, salt, and black pepper. Grill the mackerel for about 4-5 minutes on each side, or until the fish is cooked through and has nice grill marks.

    Frying the Fingerling Potatoes

    In a large pot, heat the vegetable oil over medium-high heat. Cut the fingerling potatoes in half lengthwise and fry them in batches until golden brown and crisp, about 5-7 minutes per batch. Drain on paper towels and season with salt.

Asparagus

    Toss the asparagus with olive oil, salt, and black pepper. Roast in the oven at 400°F (200°C) for about 10-12 minutes, until tender but still crisp.

Horseradish Cream

    In a bowl, mix together the sour cream, prepared horseradish, lemon juice, and salt. Adjust seasoning to taste.

Sauce Gribiche

    Chop the hard-boiled eggs and mix them with cornichons, capers, Dijon mustard, white wine vinegar, olive oil, salt, and black pepper. Stir until well combined.

Chive Oil

    Blend the chives with olive oil and salt in a blender until smooth. Strain through a fine mesh sieve if desired.
