Omelet Preparation

Prepare the Egg Mixture
In a mixing bowl, whisk together the eggs, fines herbes, salt, and black pepper until well combined.

Cook the Omelet
In a non-stick skillet, melt the butter over medium heat. Pour in the egg mixture and let it cook undisturbed for about 1-2 minutes until the edges begin to set.

Add Cheese
Sprinkle the grated Gruyère cheese over one half of the omelet. Using a spatula, carefully fold the other half over the cheese and let cook for another minute until the cheese melts.

Serve
Slide the omelet onto a plate and keep warm while you prepare the fingerlings and salad.
Fingerling Potatoes Preparation

Preheat Oven
Preheat your oven to 400°F (200°C).

Prepare Potatoes
Wash and dry the fingerling potatoes, then slice them in half lengthwise.

In a bowl, toss the potatoes with olive oil, sea salt, and chopped rosemary. Spread them on a baking sheet and roast for 25-30 minutes until golden and crispy.
