Prepare the Mornay Sauce
In a saucepan, melt 2 tablespoons of butter over medium heat. Stir in the flour and cook for about 1 minute, until bubbly. Gradually whisk in the milk, stirring constantly until the sauce thickens. Add nutmeg, salt, and pepper. Stir in Gruyère cheese until melted, then remove from heat.

Assemble the Sandwiches
Preheat the oven to 400°F (200°C). Spread butter on one side of each slice of sourdough bread. Place 4 slices, butter-side down, on a baking sheet. Layer with ham and a generous amount of Mornay sauce. Top with another slice of bread, butter-side up.

Bake the Sandwiches
Spread the remaining Mornay sauce on top of the sandwiches and sprinkle with grated Parmesan cheese. Bake in the preheated oven for about 10-15 minutes, until the sandwiches are golden brown and the cheese is bubbling.

Remove from the oven, let cool slightly, and serve hot.
