    Make the Béchamel Sauce

    In a small saucepan, melt 1 tablespoon of butter over medium heat. Whisk in the flour and cook for about 1 minute. Gradually add the milk, whisking continuously until the sauce thickens. Season with salt and pepper, then set aside.

    Assemble the Sandwich

    Spread butter on one side of each slice of bread. On the unbuttered side of one slice, layer the ham and cheese. Pour a spoonful of the béchamel sauce over the cheese, then top with the other slice of bread, buttered side up.

    Cook the Sandwich

    In a skillet over medium heat, cook the sandwich until golden brown on both sides and the cheese is melted, about 3-4 minutes per side. Remove from the skillet and keep warm.

    Fry the Egg

    In the same skillet, add a little more butter if needed and crack the egg into the pan. Fry until the white is set but the yolk is still runny, about 2-3 minutes.

    Place the fried egg on top of the sandwich and serve immediately. Enjoy your Croque Madame!
