Method

Making the Dough

  1. 1

    Combine Ingredients

In a large bowl, whisk together the flour, salt, sugar, and yeast. In a separate bowl, warm the milk slightly and add the melted butter. Pour the milk mixture into the dry ingredients and mix until a dough forms.

  2. 2

    Knead the Dough

Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth. Place the dough in a lightly greased bowl, cover with plastic wrap, and let rise in a warm place for about 1 hour or until doubled in size.

Laminating the Dough

  1. 3

    Prepare the Butter

While the dough is rising, take the 1 cup of butter for laminating and place it between two sheets of parchment paper. Roll it out into a rectangular shape about 1/2 inch thick and refrigerate.

  2. 4

    Roll Out the Dough

Once the dough has risen, turn it out onto a floured surface and roll it into a large rectangle, approximately 20x10 inches.

  3. 5

    Incorporate the Butter

Place the chilled butter slab in the center of the rolled dough. Fold the dough over the butter, sealing the edges. Roll out the dough again into a larger rectangle, then fold it into thirds like a letter. Wrap in plastic wrap and refrigerate for 30 minutes.

  4. 6

    Repeat the Lamination

Repeat the rolling and folding process two more times, chilling the dough for 30 minutes in between each fold.

Shaping and Baking

  1. 7

    Cut and Shape the Croissants

After the final chill, roll the dough out to a large rectangle. Cut the dough into triangles. Starting from the base of each triangle, roll them up towards the tip and curve slightly to form a crescent shape.

  2. 8

    Final Rise

Place the shaped croissants on a baking sheet lined with parchment paper. Cover loosely with a cloth and let them rise for about 1 hour until puffy.

  3. 9

    Bake the Croissants

Preheat the oven to 400°F (200°C). Brush the croissants with an egg wash (1 beaten egg with a splash of water) and bake for 15-20 minutes until golden brown.
