Method

Cake

  1. 1

    Prepare the Oven and Pans

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

  2. 2

    Mix Dry Ingredients

In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.

  3. 3

    Combine Wet Ingredients

Add vegetable oil, eggs, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes. Stir in boiling water until well combined.

  4. 4

    Bake the Cake

Pour the batter evenly into the prepared cake pans. Bake for 30-35 minutes or until a toothpick comes out clean.

  5. 5

    Cool the Cake

Allow the cakes to cool in the pans for 10 minutes, then remove from pans and let cool on wire racks.

Bourbon Caramel

  1. 6

    Make the Caramel

In a saucepan, combine sugar and water. Cook over medium heat, swirling the pan occasionally until the sugar dissolves and turns golden brown.

  2. 7

    Add Cream and Bourbon

Remove from heat and carefully stir in the heavy cream, bourbon, and salt. Let cool slightly.

Raspberry Coulis

  1. 8

    Prepare the Coulis

In a saucepan, combine raspberries, sugar, and lemon juice. Cook over medium heat until the raspberries break down and the mixture thickens, about 10 minutes.

  2. 9

    Blend and Strain

Blend the mixture until smooth, then strain through a fine mesh sieve to remove seeds.
