    Prepare the Beef Tips

    Season the beef tips with salt and black pepper. In a large skillet, heat olive oil over medium-high heat. Add the beef tips and sear on all sides until browned. Remove and set aside.

    Cook the Aromatics

    In the same skillet, add garlic and onion. Sauté until softened, about 3-4 minutes.

    Deglaze the Pan

    Pour in the red wine and scrape the bottom of the skillet to deglaze. Let it reduce by half.

    Add Broth and Simmer

    Stir in the beef broth and return the beef tips to the skillet. Bring to a simmer, cover, and cook for about 20-25 minutes.

    Finish with Butter and Thyme

    Stir in butter and fresh thyme before serving.

Horseradish Mashed Yukon Potatoes

    Boil the Potatoes

    Peel and cut Yukon Gold potatoes into chunks. Boil in salted water until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return to the pot. Add butter, heavy cream, horseradish, salt, and black pepper. Mash until smooth and creamy.

Bordelaise Sauce

    Sauté Shallots

    In a small saucepan, sauté minced shallots in 1 tablespoon of butter until translucent.

    Reduce the Sauce

    Add red wine and beef stock, then simmer until reduced by half. Stir in remaining butter and chopped parsley before serving.
