Gulab Jamun Balls
Sugar Syrup (Chashni)
Garnish & Serving
Method
Gulab Jamun Balls
- 1
Make the dough
In a bowl, whisk together 1 cup milk powder, 1/4 cup all-purpose flour and 1/8 tsp baking soda until evenly combined. Stir in 2 tbsp melted ghee and 1 tsp yogurt (if using). Add 3 tbsp whole milk gradually, mixing gently to form a soft, slightly sticky dough. The dough should come together with no dry powder; if too dry, add milk 1/2 tsp at a time. Do not overwork the dough — mix just until combined.
- 2
Rest and shape
Cover the dough and let it rest for 10 minutes. After resting, divide the dough into 12 equal portions (about 20–22 g each). Roll each portion between your palms into a smooth, crack-free ball. Smooth surface prevents cracking while frying.
- 3
Prepare for frying
Heat 2 cups oil or ghee in a deep, heavy-bottomed pan over medium-low heat. Aim for 325–350°F (approx. medium-low). To test, drop a tiny piece of dough — it should rise slowly and steadily without browning too quickly. Maintain even, low-medium frying temperature to ensure jamuns cook through and absorb syrup.
- 4
Fry the balls
Gently slide 4–5 balls at a time into the oil, avoiding crowding. Stir gently and keep the temperature steady. Fry, stirring slowly, until the balls turn golden brown all over (about 6–8 minutes). Remove with a slotted spoon and drain briefly on paper towels for 30–60 seconds — do not let them cool completely (they should still be warm) so they absorb syrup better.
Sugar Syrup (Chashni)
- 5
Make the syrup
In a saucepan combine 1.5 cups granulated sugar and 1 cup water. Add 4 lightly crushed green cardamom pods and 8 saffron strands. Bring to a gentle boil over medium heat, stirring until sugar dissolves. Reduce heat and simmer for 6–8 minutes until slightly sticky but still fluid (one-string consistency is optional). Add 1/2 tsp lemon juice to prevent crystallization and simmer 1 minute more.
- 6
Finish the syrup
Turn off heat and stir in 1 tsp rose water. Taste and adjust: syrup should be sweet and fragrant. Keep the syrup warm; for best absorption, the syrup temperature should be warm (not scalding) when you drop in the fried balls.
- 7
Soak the fried jamuns
Place the warm fried gulab jamun balls into the warm syrup. Gently press down so they are fully submerged. Cover and let them soak for at least 1 hour at room temperature so they absorb syrup and become soft and juicy. For deeper flavor, soak 3–4 hours or refrigerate in syrup overnight (bring to room temperature before serving).
Garnish & Serving
- 8
Transfer soaked gulab jamuns to a serving bowl with some syrup. Garnish with 2 tbsp chopped pistachios, 1 tbsp slivered almonds and 1 tsp crushed dried rose petals if using. Serve warm, at room temperature, or chilled with a drizzle of extra syrup. Each serving is 2 jamuns with syrup and garnish.
