Doodh (Milk) Base
Nuts & Garnish
Method
Preparation
- 1
Soak saffron
Place saffron strands in 1 tablespoon of warm milk and set aside to infuse while you heat the milk (10–15 minutes). This brings out color and aroma.
- 2
Prep nuts
If not already blanched, blanch almonds: plunge almonds into boiling water for 1 minute, drain, slip off skins, then slice/sliver. Lightly chop or sliver pistachios. Reserve for final garnish and stirring into rabri.

After 30–40 minutes of gentle simmering and periodic stirring/skimming, add 100 ml evaporated milk (optional, for extra creaminess) and 6 tablespoons sugar. Stir gently to dissolve sugar completely. Continue to simmer on low heat until the milk has reduced to roughly one-third of its original volume and is thick and creamy (this will take about 45–60 minutes total reduction time depending on heat and pan). Stir more frequently toward the end to avoid scorching.

Finishing & Garnish
- 8
Turn off the heat and allow rabri to cool slightly for 10 minutes. If using rose water, add 1 teaspoon now and stir gently.
- 9
Fold in about half of the slivered almonds and pistachios so they are suspended throughout the rabri. Reserve the remainder for garnish.
- 10
Transfer rabri to serving bowls or a shallow dish. Chill in the refrigerator for at least 2 hours for best texture and flavor. Rabri can also be served warm, but chilling helps it set and develop flavors.
- 11
Before serving, garnish with the reserved slivered almonds and pistachios and a light pinch of additional saffron strands or a few crumbled nuts. Serve plain or with jalebi, malpua, or as an accompaniment to kheer or rabri-based desserts.
