    Prepare the Base

    In a large paella pan or skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion becomes translucent.

    Add Vegetables

    Stir in the diced red and green bell peppers, cooking for about 5 minutes until they soften. Add the diced tomato and cook for another 2-3 minutes.

    Cook the Rice

    Add the Bomba rice to the pan, stirring to coat with the oil and vegetables. Toast the rice for about 2 minutes.

    Add Broth and Spices

    Pour in the vegetable broth and add the saffron, smoked paprika, salt, and black pepper. Bring the mixture to a boil.

    Simmer

    Reduce the heat to low and let the paella simmer uncovered for about 15-20 minutes, or until the rice is cooked and has absorbed most of the liquid.

    Add Peas and Artichokes

    In the last 5 minutes of cooking, add the green peas and artichoke hearts, mixing gently into the rice.

    Final Touch

    Once the rice is cooked and the liquid is absorbed, remove from heat. Let it rest for 5 minutes before serving.
