Prepare the Base
In a large paella pan or wide skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and red bell pepper, cooking for another 2-3 minutes.

Add Tomatoes and Rice
Stir in the diced tomatoes and cook for 5 minutes until softened. Add the rice, stirring to coat in the mixture and cook for about 2 minutes.

Add Broth and Seasonings
Pour in the fish stock or seafood broth, and add the saffron, paprika, salt, and black pepper. Bring to a gentle simmer.

Cook the Seafood
After about 10 minutes of simmering, gently add the shrimp, mussels, and calamari. Do not stir the rice anymore; let it cook undisturbed for about 10-15 minutes until the seafood is cooked and the rice has absorbed the liquid.

Finish and Serve
Once cooked, remove from heat and cover with a clean kitchen towel for 5 minutes. Garnish with fresh parsley and serve with lemon wedges.
