Prepare the Ingredients
Gather all the ingredients and cut the chicken and rabbit into pieces.

Heat the Oil
In a large paella pan or wide skillet, heat the olive oil over medium heat.

Brown the Meat
Add the chicken and rabbit pieces to the pan. Cook until browned on all sides, about 10-15 minutes.

Add Vegetables
Stir in the green beans and grated tomato, cooking for another 5 minutes.

Add Rice and Seasoning
Add the rice, saffron, salt, and black pepper. Stir to combine all ingredients.

Add Broth
Pour in the chicken broth, bring to a boil, then reduce to a simmer. Cook without stirring for about 20 minutes.

Rest the Paella
Once the rice has absorbed the liquid and is cooked through, remove from heat and let it rest for about 5 minutes.

Serve the paella warm, garnished with lemon wedges.
