    Make the Béchamel Sauce

    In a saucepan, melt the butter over medium heat. Once melted, add the flour and whisk continuously for about 2 minutes to create a roux.

    Add Milk and Seasonings

    Gradually add the milk while whisking to avoid lumps. Cook until the sauce thickens (about 5-7 minutes). Stir in salt, black pepper, nutmeg (if using), and the cooked chicken (or your choice of filling). Remove from heat and let cool.

    Shape the Croquettes

    Once the mixture is cooled, take small portions and shape them into balls or cylinders. Place them on a tray and refrigerate for about 30 minutes to firm up.

    Bread the Croquettes

    Prepare a breading station: beat the eggs in one bowl and place the breadcrumbs in another. Dip each croquette into the egg, then coat with breadcrumbs.

    Fry the Croquettes

    Heat the vegetable oil in a deep frying pan over medium-high heat. Fry the croquettes in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.
