    Prepare the Bacon

    In a skillet over medium heat, cook the bacon until crispy. Once done, remove from the skillet and let it drain on paper towels.

    Cook the Potatoes

    In the same skillet, add olive oil and diced house potatoes. Season with salt and pepper. Cook for about 10-15 minutes, stirring occasionally, until golden and tender.

    Cook the Eggs

    While the potatoes are cooking, bring a small pot of water to a simmer. Crack the eggs into the simmering water and poach them for about 3-4 minutes until the whites are set but the yolk is still runny. Remove with a slotted spoon.

    Toast the Muffins

    While the eggs are poaching, split the English muffins and toast them until golden brown.

    Assemble the Muffins

    On each toasted muffin half, layer the crispy bacon, a generous spoonful of onion jam, and a sprinkle of grated Gruyère cheese. Top each with a poached egg.
