Prepare the Chicken
Pat the chicken breasts dry with paper towels. Season both sides with blackening seasoning, salt, and pepper.

Cook the Chicken
In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until the chicken is cooked through and has a charred, blackened crust. Remove from heat and let rest.

Cook the Bacon
In the same skillet, add the bacon slices and cook until crispy. Remove and drain on paper towels.

Prepare the Buns
Toast the brioche buns in the skillet until golden brown.

Assemble the Sandwich
Spread mayonnaise on the bottom half of each toasted bun. Add the blackened chicken, followed by avocado slices, crispy bacon, pickled onions, and white cheddar cheese. Top with the other half of the bun.
