For the Smoked Tri-Tip

    Prepare the Marinade

    In a bowl, mix olive oil, garlic powder, onion powder, paprika, salt, and black pepper. Rub the mixture all over the tri-tip roast.

    Smoke the Tri-Tip

    Preheat the smoker to 225°F (107°C). Place the tri-tip in the smoker and cook for about 2-3 hours, or until it reaches your desired level of doneness.

For the Blue Cheese Potatoes

    Cook the Potatoes

    Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and mash them in a bowl.

    Mix in Blue Cheese

    Add blue cheese, heavy cream, butter, salt, and black pepper to the mashed potatoes. Stir until well combined.

For the Onion Rings

    Prepare the Breading

    Set up a breading station with flour, cornmeal, beaten eggs mixed with buttermilk, and a bowl for the seasoned flour.

    Bread the Onion Rings

    Dip onion slices in flour, then in the egg mixture, and finally coat them with cornmeal.

    Fry the Onion Rings

    Heat vegetable oil in a deep pan. Fry the onion rings in batches until golden brown, about 3-4 minutes per batch.

For the White BBQ Sauce

    Mix the Sauce

    In a bowl, combine mayonnaise, apple cider vinegar, Dijon mustard, garlic powder, salt, and black pepper. Whisk until smooth.
