Preparation

    Prepare the Chicken

    Rub the duck fat, salt, black pepper, and smoked paprika all over the chicken halves. Let it marinate for at least 30 minutes.

    Make Red Chile Honey

    In a small saucepan, combine red chile flakes and honey. Heat gently until warm, mixing well. Set aside.

    Prepare Duck Fat Tortillas

    In a bowl, mix flour and salt. Cut in the duck fat until crumbly. Gradually add water until a dough forms. Divide into balls, roll out into tortillas, and cook on a hot skillet for 1-2 minutes per side.

    Make Pepita Crema

    Blend together pumpkin seeds, sour cream, lime juice, and salt until smooth. Adjust seasoning to taste.

    Prepare Cabbage Slaw

    In a large bowl, combine shredded cabbage, carrot, apple cider vinegar, salt, and black pepper. Toss to mix.

Cooking

    Smoke the Chicken

    Preheat your smoker to 250°F (120°C). Place the marinated chicken halves in the smoker and cook for about 2 hours, or until the internal temperature reaches 165°F (75°C).

    Heat the Pintos

    In a saucepan, heat cooked pinto beans with cumin and salt over medium heat until warmed through.
