Prepare the Burger Patties
In a bowl, combine the ground beef and chopped Hatch green chiles. Form into two equal patties (1/2 lb each). Season with salt and pepper to taste.

Cook the Burger Patties
Preheat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes on one side. Flip and place a slice of American cheese and a slice of white cheddar cheese on each patty. Cook for an additional 4-5 minutes until the cheese is melted and the burger is cooked to your desired doneness.

Assemble the Burger
Spread a tablespoon of mayonnaise on the bottom half of a burger bun. Place the cooked burger patty on top, followed by caramelized onions and sliced pickles. Top with the other half of the bun.
