    Prepare the Ingredients

    Gather all ingredients and prepare them as needed. Soak the ayocote morado beans overnight if not using canned beans.

    Sear the Lamb

    In a large pot, heat olive oil over medium-high heat. Add the cubed lamb and sear until browned on all sides. Remove from pot and set aside.

    Sauté the Vegetables

    In the same pot, add chopped onion, garlic, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are soft and the onion is translucent.

    Combine Ingredients

    Return the seared lamb to the pot. Add the soaked ayocote morado beans, vegetable broth, bay leaves, thyme, rosemary, salt, and black pepper. Stir to combine.

    Simmer the Stew

    Bring to a boil, then reduce heat to low. Cover and let simmer for about 1.5 to 2 hours, or until the lamb is tender and the beans are cooked through.

    Finish and Serve

    Remove bay leaves. Adjust seasoning if necessary. Serve hot, garnished with crumbled sheep’s milk cheese and alongside slices of country sourdough bread.
