Method

Prepare the Blood Orange Curd

    Juice the Blood Oranges

    Squeeze the juice from the blood oranges to yield about 1 cup of juice. Strain to remove seeds and pulp.

    Cook the Curd

    In a saucepan, whisk together the blood orange juice, sugar, eggs, and salt. Cook over medium heat, stirring constantly until it thickens enough to coat the back of a spoon (about 10 minutes).

    Add Butter

    Remove from heat and whisk in the butter until smooth. Transfer to a bowl and cover with plastic wrap, pressing it directly onto the surface. Refrigerate until chilled.

Make the Coriander Crème Fraiche

    In a bowl, mix the crème fraîche with chopped fresh coriander leaves and lime juice. Stir until well combined. Refrigerate until ready to use.

Prepare the Topping

    Toast the Pepitas

    In a dry skillet over medium heat, toast the pumpkin seeds until they start to pop and turn golden, about 5 minutes. Drizzle with honey and sprinkle with salt, then stir to coat.

Assemble the Parfait

    In serving glasses, layer the blood orange curd, followed by a layer of coriander crème fraîche, and top with the honeyed pepitas. Repeat the layers as desired.
