Preheat the Oven
Preheat your oven to 425°F (220°C).

Mix Dry Ingredients
In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.

Cut in Butter
Cut the cold butter into small pieces and add it to the dry ingredients. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

Add Wet Ingredients
Stir in the buttermilk, diced green chiles, and shredded cheddar cheese until just combined. Do not overmix.

Shape Biscuits
Turn the dough out onto a floured surface and gently knead it a few times. Pat it into a 1-inch thick rectangle and cut out biscuits using a biscuit cutter.

Bake
Place the biscuits on a baking sheet lined with parchment paper and bake for 12-15 minutes or until golden brown.
