    Prepare the Steak

    Remove the ribeye steak from the refrigerator and let it come to room temperature for about 30 minutes. Pat dry with paper towels.

    Season the Steak

    Rub the steak with olive oil, salt, and black pepper on both sides.

    Cook the Steak

    Heat a skillet or grill pan over medium-high heat. Once hot, add the steak and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let it rest for 5 minutes.

    Prepare the Mushroom Demi

    In the same pan, add a bit more olive oil if needed, then add the sliced mushrooms, shallots, and garlic. Sauté until the mushrooms are browned and the shallots are translucent, about 5 minutes.

    Deglaze the Pan

    Add the red wine to the pan, scraping up any browned bits. Allow it to simmer and reduce by half.

    Make the Sauce

    Add the beef broth and thyme to the pan. Simmer until the sauce thickens slightly, about 5-7 minutes. Stir in the butter for a rich finish.

    Serve

    Slice the ribeye steak if desired and serve it topped with the mushroom demi sauce.
