    Prepare the Batter

    In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Whisk together until well combined.

    Add Liquid

    Gradually add the cold beer or sparkling water to the dry ingredients, stirring until the batter is smooth and well mixed. The batter should be thick enough to coat the back of a spoon.

    Heat Oil

    In a deep frying pan or pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; if it sizzles and rises to the surface, the oil is ready.

    Fry the Fish

    Dip each fish fillet into the batter, ensuring it is fully coated. Carefully lower the battered fish into the hot oil, frying for about 4-5 minutes on each side or until golden brown and crispy. Remove the fish and drain on paper towels.

    While the fish is frying, toast the burger buns lightly in a separate skillet or on a grill until golden brown.
