Finely chop the green cabbage, ensuring it is evenly shredded for a consistent texture. Place it in a large mixing bowl.

Using a box grater or food processor, grate the carrots until you have 2 cups. Add them to the bowl with the cabbage.

In a separate bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, black pepper, and celery seed until smooth and creamy.

Pour the dressing over the chopped vegetables in the large mixing bowl. Toss everything together until the cabbage, carrots, and green onions are well coated with the dressing.
