Prepare the Biscuit Dough
Preheat your oven to 425°F (220°C). In a large mixing bowl, combine the all-purpose flour, baking powder, and salt. Whisk together until well blended.

Cut in the Butter
Add the cold unsalted butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.

Shape the Biscuits
Turn the dough out onto a floured surface. Pat it down to about 1-inch thickness. Use a biscuit cutter to cut out biscuits and place them on a baking sheet lined with parchment paper.

Bake the Biscuits
Bake in the preheated oven for 12-15 minutes, or until the tops are golden brown. Remove from the oven and set aside.

Cook the Sausage
In a large skillet over medium heat, add the breakfast sausage. Cook, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes.

Make the Roux
Sprinkle the flour over the cooked sausage and stir to combine. Cook for 1-2 minutes to eliminate the raw flour taste.

Add Milk and Season
Gradually stir in the milk, whisking constantly to avoid lumps. Bring the mixture to a simmer and continue cooking until thickened, about 5-7 minutes.

Season the Gravy
Add salt, black pepper, and red pepper flakes (if using) to the gravy. Taste and adjust seasoning as necessary.
