Prepare the Ingredients

    Slice the Vegetables

    Thinly slice the onion, bell peppers, and mushrooms. Set aside.

    Prepare the Steak

    Season the ribeye steak with salt, black pepper, garlic powder, and paprika on both sides. Let it sit for about 10 minutes to absorb the flavors.

Cook the Vegetables

    Sauté the Onions and Peppers

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and bell peppers. Cook until the onions are translucent and the peppers are tender, about 5-7 minutes.

    Add the Mushrooms

    Add the sliced mushrooms to the skillet and continue to cook for another 5 minutes, stirring occasionally. Remove the vegetable mixture from the skillet and set aside.

Cook the Steak

    Cook the Steak

    In the same skillet, add the remaining tablespoon of olive oil and increase the heat to medium-high. Once hot, add the seasoned ribeye steak. Cook for about 4-5 minutes on each side for medium-rare, or until desired doneness is achieved.

    Melt the Cheese

    During the last minute of cooking, place the provolone cheese on top of the steak and cover the skillet with a lid to allow the cheese to melt.

Assemble the Sandwich

    Prepare the Rolls

    Slice the hoagie rolls open lengthwise without cutting all the way through.

    Build the Sandwich

    Place the cooked steak with melted cheese inside each hoagie roll. Top with the sautéed onions, mushrooms, and peppers.

    Serve

    Serve the steak and cheese sandwiches hot, with optional side condiments like hot sauce or mustard.
