Make the Root Beer Base
In a large pot, combine the water, sugar, and brown sugar. Stir until the sugars are completely dissolved.

Add Flavors
Add the vanilla extract, sassafras root, and wintergreen leaves to the pot. Bring the mixture to a boil over medium heat, then reduce the heat and let it simmer for 20 minutes.

Strain the Mixture
After simmering, remove the pot from heat and strain the mixture through a fine mesh sieve into a large bowl or pitcher to remove the solids.

Cool the Base
Allow the root beer base to cool to room temperature, then refrigerate until chilled.
Carbonation

Activate the Yeast
In a small bowl, dissolve the yeast in 1/4 cup of warm water. Let it sit for about 5 minutes until it becomes frothy.

Combine and Carbonate
Once the root beer base is chilled, combine it with the activated yeast mixture and club soda in a large container. Stir gently to combine.

Fermentation
Cover the container with a clean cloth and let it sit at room temperature for about 1-2 days to carbonate. Check periodically for carbonation.

Once the desired carbonation is reached, transfer the root beer to bottles and refrigerate. Serve chilled.
