Prepare the Fish
Rinse the fresh fish fillets under cold water and pat them dry with paper towels. Season both sides of the fish with salt and black pepper.

Make the Batter
In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold water and beer (if using) until the batter is smooth and thick.

Fry the Fish
Dip each seasoned fish fillet into the batter, allowing any excess to drip off. Carefully place the battered fish into the hot oil, frying in batches to avoid overcrowding. Fry for about 4-5 minutes on each side or until golden brown and crispy.

Once cooked, remove the fish from the oil and place them on a plate lined with paper towels to drain excess oil. Serve immediately while hot.
