Method
Prepare the Chicken

Season the Chicken
Start by seasoning the boneless, skinless chicken breasts with salt and black pepper on both sides.

Cook the Chicken
Heat 1 tablespoon of olive oil in a grill pan or skillet over medium-high heat. Add the seasoned chicken breasts and cook for 6-7 minutes on each side, or until they reach an internal temperature of 165°F (75°C) and are golden brown.

Allow to Rest
Remove the chicken from the heat and let it rest for about 5 minutes before slicing it into strips.
Prepare the Peppers and Onions

Sauté the Peppers and Onions
In the same pan, add the remaining tablespoon of olive oil. Add the fried onions and fried bell peppers to the pan and sauté for 2-3 minutes until heated through and slightly crispy.
Assemble the Sandwich

Prepare the Rolls
Slice the hoagie or grinder rolls in half lengthwise, being careful not to cut all the way through.

Spread Chipotle Mayo
Spread 2 tablespoons of chipotle mayo on the inside of each roll.

Layer the Filling
Layer the sliced chicken, sautéed peppers, fried onions, and Swiss cheese evenly on each roll.

Melt the Cheese (Optional)
If desired, place the assembled sandwiches under a broiler for 2-3 minutes to melt the Swiss cheese slightly.

Serve the Philly chicken sandwiches immediately, garnished with additional chipotle mayo if desired.
