    Prepare the Ingredients

    Thinly slice the liver into even pieces, about 1/2 inch thick. Slice the onions into rings and set aside. Cut the bacon into smaller pieces if desired.

Cooking

    Cook the Bacon

    In a large skillet over medium heat, add the bacon. Cook until crispy, about 5-7 minutes. Once cooked, remove the bacon from the skillet and set it aside, leaving the bacon fat in the pan.

    Caramelize the Onions

    In the same skillet, add the sliced onions to the bacon fat. Reduce the heat to low and cook, stirring occasionally, until the onions are golden brown and caramelized, about 15-20 minutes. Season with a pinch of salt.

    Cook the Liver

    Increase the heat to medium-high. Add butter or oil to the skillet, then add the sliced liver. Season with salt and black pepper. Cook for about 3-4 minutes on each side until browned and cooked through. Do not overcook.

Assembling the Sandwich

    Build the Sandwich

    Toast the bread slices in the skillet or toaster. Spread Dijon mustard on one side of each slice if using. Layer the cooked liver, crispy bacon, and caramelized onions between two slices of bread.
