Potatoes

Method

Preparation

  1. 1

    Prepare the potatoes

Wash and peel the russet potatoes. Cut them into even-sized strips, about 1/4 inch thick, to ensure even cooking.

  2. 2

    Soak the potatoes

Place the cut potatoes in a bowl of cold water for at least 30 minutes to remove excess starch. This will help them become crispy when cooked.

Cooking

  1. 3

    Heat the oil

In a deep fryer or large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  2. 4

    Drain and dry the potatoes

Drain the soaked potatoes and pat them dry with paper towels to remove excess water.

  3. 5

    Fry the potatoes

Carefully add the dried potato strips to the hot oil in batches, frying them for about 5-7 minutes or until golden brown. Remove them with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.

  4. 6

    Season the fries

While the fries are still hot, sprinkle them with salt, black pepper, and paprika to taste.

  5. 7

    Add the cheese

Transfer the hot fries to an oven-safe dish. Evenly sprinkle the shredded cheddar cheese and parmesan cheese over the fries.

  6. 8

    Melt the cheese

Place the dish under the broiler for 2-3 minutes, or until the cheese is melted and bubbly. Keep a close eye to prevent burning.

Serving

  1. 9

    Serve the fries

Remove the dish from the oven and serve immediately while hot. Enjoy your cheesy fries!
