Method

Preparation

  1. 1

    Slice the Zucchini

Wash the zucchini thoroughly and slice them into 1/4 inch thick rounds. Set aside.

  2. 2

    Prepare the Breading

In a shallow bowl, combine the flour, cornmeal, salt, pepper, garlic powder, and paprika. Mix well.

  3. 3

    Prepare the Wet Mixture

In another bowl, whisk together the eggs and milk until fully combined.

Frying

  1. 4

    Heat the Oil

In a large skillet, heat the vegetable oil over medium-high heat. You will know it's ready when a small drop of the wet mixture sizzles in the oil.

  2. 5

    Bread the Zucchini Slices

Dip each zucchini slice first into the wet mixture, allowing excess to drip off, then coat it in the breading mixture. Press gently to adhere the coating.

  3. 6

    Fry the Zucchini

Carefully place the breaded zucchini slices into the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side or until they are golden brown and crispy.

  4. 7

    Drain the Zucchini

Once fried, use a slotted spoon to remove the zucchini slices and place them on a paper towel-lined plate to drain excess oil.

Serving

  1. 8

    Serve Hot

Serve the fried zucchini hot, optionally with a dipping sauce like ranch or marinara on the side.
