Preparing the Fries

Cut the Potatoes
Wash and peel the Russet potatoes. Cut them into thin strips, about 1/4 inch thick.

Soak the Potatoes
Place the cut potatoes in a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes for crispier fries.

Dry the Potatoes
After soaking, drain the potatoes and pat them dry thoroughly with paper towels.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the dried potato strips to the hot oil in batches. Fry for about 5-7 minutes or until the fries are golden brown and crispy. Remove them with a slotted spoon and place them on paper towels to drain excess oil.

While the fries are still hot, sprinkle them with salt to taste.

Add the Flour
Whisk in the all-purpose flour and cook for about 1 minute to create a roux, stirring constantly.

Gradually whisk in the milk, ensuring there are no lumps. Continue to cook, stirring frequently, until the mixture thickens, about 3-5 minutes.

Add the Cheese
Remove the saucepan from heat and stir in the shredded cheddar cheese until melted and smooth.

Stir in the paprika and black pepper. Adjust seasoning to taste.

Place the hot fries on a serving plate or platter. Pour the cheese sauce generously over the fries.
