Fish Batter Preparation

    Prepare the Batter

    In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Mix well until all dry ingredients are evenly distributed.

    Add Water

    Slowly add the cold water to the dry mixture, whisking continuously until you achieve a smooth, thick batter. Let it sit for about 10 minutes.

Fish Frying

    Heat Oil

    In a deep skillet or frying pan, heat enough oil (about 2 inches deep) over medium-high heat until it reaches 350°F (175°C).

    Batter the Fish

    Take each fish fillet and dip it into the batter, ensuring it's fully coated.

    Fry the Fish

    Carefully place the battered fish fillets into the hot oil, frying in batches if necessary. Fry for about 4-5 minutes on each side or until golden brown and crispy.

    Drain

    Once cooked, remove the fish from the oil and place it on a plate lined with paper towels to drain excess oil.

Sandwich Assembly

    Prepare the Buns

    Toast the sandwich buns lightly on a skillet or in a toaster.

    On the bottom half of each bun, place a lettuce leaf, followed by a piece of the fried fish, a slice of tomato, and a generous dollop of tartar sauce.

    Place the top half of the bun over the sandwich. Serve with lemon wedges on the side for squeezing over the fish.
