Method

Prepare the Rolls

    Split the Portuguese Rolls

    Using a serrated knife, carefully slice the Portuguese rolls in half horizontally and set aside.

    Toast the Rolls

    In a skillet over medium heat, melt 1 tablespoon of butter. Place the cut sides of the rolls down in the skillet and toast until golden brown, about 2-3 minutes. Remove from skillet and set aside.

Cook the Eggs

    Whisk the Eggs

    In a bowl, crack the large eggs and add salt and pepper. Whisk until the mixture is well blended and slightly frothy.

    Scramble the Eggs

    In the same skillet, melt the remaining tablespoon of butter over medium heat. Pour the whisked eggs into the skillet and cook, stirring gently, until the eggs are scrambled and fluffy, about 3-4 minutes.

Assemble the Sandwich

    Add Cheese

    Once the eggs are cooked, remove the skillet from heat. Lay two slices of cheddar cheese on top of the scrambled eggs, allowing the heat to melt the cheese.

    Build the Sandwich

    On the bottom half of each toasted Portuguese roll, evenly distribute the cheesy scrambled eggs. Top with the other half of the roll to complete the sandwich.

Serve

    Cut the sandwiches in half if desired and serve warm.
