Soak the Potatoes
Place the curly potato strips in a large bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch and makes the fries crispier.

Heat the Oil
In a deep fryer or a heavy pot, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the correct temperature for frying.

Season the Potatoes
In a bowl, mix together the paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Drain the soaked potato strips and pat them dry with paper towels. Toss the dry potato strips in the seasoning mixture until evenly coated.

Fry the Potatoes
Carefully add a handful of the seasoned curly potato strips to the hot oil. Fry in small batches to avoid overcrowding. Cook for about 5-7 minutes or until golden brown and crispy. Remove with a slotted spoon and place on paper towels to drain excess oil.

Serve
Once all the curly fries are cooked, serve them hot. Optionally, sprinkle with grated Parmesan cheese and chopped parsley. Serve with ketchup on the side for dipping.
