    Cook Bacon

    In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the rendered fat in the pot.

    Sauté Vegetables

    In the same pot with the bacon fat, add chopped onion and celery. Sauté until they are soft and translucent, about 5 minutes.

    Add Potatoes

    Add the diced potatoes to the pot and stir well to combine with the onions and celery.

Cooking

    Add Broth and Seasonings

    Pour in the chicken or vegetable broth, add the bay leaf, dried thyme, black pepper, and salt to taste. Bring the mixture to a boil.

    Simmer

    Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15 minutes or until the potatoes are tender.

    Add Clams and Cream

    Stir in the clams and heavy cream. Continue to cook on low heat for another 5-10 minutes, allowing the flavors to meld together.

Serving

    Garnish and Serve

    Remove the bay leaf. Ladle the chowder into bowls, sprinkle with chopped parsley and the reserved crispy bacon. Serve hot.
