Prepare the Chicken

    Marinate the Chicken

    In a bowl, combine the olive oil, garlic powder, paprika, salt, and black pepper. Add the chicken breasts and coat them well. Let marinate for at least 20 minutes.

    Grill or Cook Chicken

    Preheat your grill or a skillet over medium-high heat. Cook the marinated chicken for about 6-7 minutes on each side, or until fully cooked through and juices run clear. Remove from heat and let it rest for a few minutes before slicing.

Cook the Vegetables

    Sauté Peppers and Onions

    In the same skillet or a separate pan, add a little olive oil if needed and sauté the sliced bell peppers and onion over medium heat for about 5-7 minutes, or until they are tender and slightly caramelized.

Assemble the Sandwich

    Prepare the Grinder

    Slice the grinder rolls lengthwise without cutting all the way through. If desired, spread mayonnaise inside the rolls.

    Add the Fillings

    Layer the sliced grilled chicken, sautéed peppers, and onions into the rolls. Top with shredded mozzarella cheese.

    Melt the Cheese

    Place the assembled grinders under a broiler for 2-3 minutes, or until the cheese is melted and bubbly. Keep a close eye to avoid burning.
