Dough Preparation

    Mix Dry Ingredients

    In a large mixing bowl, combine the all-purpose flour and salt. Mix well to ensure the salt is evenly distributed.

    Add Butter

    Cut the cold butter into small pieces and add to the flour mixture. Use a fork or pastry cutter to blend until the mixture resembles coarse crumbs.

    Add Water

    Gradually add the cold water, one tablespoon at a time, mixing until the dough comes together. You may not need all the water, so add it slowly until the dough is moist but not sticky.

    Chill Dough

    Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Filling Preparation

    Cook Vegetables

    In a skillet, heat olive oil over medium heat. Add the chopped onion and bell pepper. Sauté for about 3-4 minutes, until soft.

    Add Garlic and Spices

    Stir in the minced garlic, cumin, paprika, salt, and black pepper. Cook for another 1-2 minutes until fragrant.

    Combine Chicken

    Add the shredded chicken to the skillet and stir until well combined. Cook for an additional 2-3 minutes to heat through. Remove from heat and let it cool slightly.

Empanada Assembly and Cooking

    Preheat Oven

    Preheat your oven to 375°F (190°C).

    Roll Out Dough

    On a lightly floured surface, roll out the chilled dough to about 1/8 inch thick. Use a round cutter to cut out circles, approximately 5-6 inches in diameter.

    Fill Empanadas

    Place a spoonful of the chicken filling in the center of each dough circle. Fold the dough over to create a half-moon shape and press the edges together to seal. You can crimp the edges with a fork for a decorative touch.

    Bake Empanadas

    Place the filled empanadas on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes, or until golden brown.
