    Make the dough

    In a large mixing bowl, combine the all-purpose flour and salt. Add the unsalted butter and mix until the mixture resembles coarse crumbs.

    Add water

    Gradually add water to the flour mixture, stirring until the dough comes together. Knead the dough for about 5 minutes until smooth. Cover with plastic wrap and let it rest for 30 minutes.

    Cook the chicken

    In a small pot, boil the chicken breast in salted water until fully cooked (about 15-20 minutes). Let it cool, then shred it.

    Sauté vegetables

    In a skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, and sauté until soft (about 5 minutes). Add minced garlic and cook for an additional minute.

    Combine filling

    Add the shredded chicken to the skillet, along with cumin, paprika, salt, and pepper. Mix well and cook for another 2-3 minutes to combine flavors. Remove from heat and let cool.

Assembly and Cooking

    Roll out the dough

    On a floured surface, roll out the dough to about 1/8 inch thick. Using a round cutter, cut out circles (about 4-5 inches in diameter).

    Fill the empanadas

    Place about 1-2 tablespoons of the chicken filling in the center of each dough circle. Fold the dough over to create a half-moon shape, and press the edges to seal. You may use a fork to crimp the edges for a decorative touch.

    Bake the empanadas

    Preheat the oven to 375°F (190°C). Place the empanadas on a baking sheet lined with parchment paper. Brush the tops with a little olive oil. Bake for 20-25 minutes or until golden brown.

    Let the empanadas cool slightly before serving. Serve with sour cream on the side.
