Prepare the Chicken
Start by preheating your grill to medium-high heat. While the grill is heating, take the chicken breasts and pat them dry with paper towels. This will help the seasoning stick better.

Season the Chicken
Rub each chicken breast generously with Cajun seasoning on both sides, ensuring they are well coated. Let them marinate for about 10 minutes to absorb the flavors.

Grill the Chicken
Place the seasoned chicken breasts on the grill. Cook for about 6-7 minutes on one side, then flip and grill for another 5-6 minutes until the internal temperature reaches 165°F (75°C). In the last minute of cooking, place a slice of pepper jack cheese on each chicken breast to melt.

Finish with Toppings
On the bottom half of each bun, add a generous amount of chipotle-lime mayo (recipe can be made separately). Place the grilled chicken with melted cheese on top, followed by crispy fried onions and pickles. Top with the other half of the bun.
