Cooking the Patty

Prepare the Bison Patty
In a large bowl, combine the ground bison with salt, black pepper, garlic powder, and onion powder. Mix gently until all ingredients are evenly combined, being careful not to overwork the meat.

Form the Patty
Divide the mixture into four equal portions, each weighing approximately 1/3 lb. Shape each portion into a round patty, about 3/4 inch thick. Make a slight indentation in the center of each patty to help it cook evenly.

Add Cheese
In the last minute of cooking, place a slice of cheddar cheese on top of each patty. Cover with a lid or metal bowl to help the cheese melt.
