    Prepare the Eggs

    In a small bowl, crack the eggs and season with salt and black pepper. Whisk lightly until the yolks and whites are combined.

    Cook the Eggs

    Heat a non-stick skillet over medium heat and add the butter. Once melted, pour in the eggs and cook for about 2-3 minutes until the edges start to set. Gently stir with a spatula and cook for another 1-2 minutes until the eggs are cooked to your desired doneness.

    Prepare the Potatoes

    Peel the potatoes and grate them using a box grater or food processor. Place the grated potatoes in a clean towel and squeeze out excess moisture.

    Cook the Hashbrowns

    In a large skillet, heat olive oil over medium heat. Add the grated potatoes and chopped onion. Season with salt and black pepper. Press down with a spatula to form a flat layer and cook for about 5-7 minutes until golden brown. Flip the hashbrowns and cook for another 5-7 minutes until the other side is crispy and golden.

    Toast the Rolls

    While the eggs and hashbrowns are cooking, slice the Portuguese rolls in half. In a separate skillet, melt the butter over medium heat. Place the sliced rolls cut-side down in the skillet and toast until golden brown, about 2-3 minutes.
