    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy. Remove from the skillet and let them drain on paper towels. Once cooled, crumble the bacon and set aside.

    Prepare the Vegetables

    In the same skillet, using the bacon drippings, sauté the chopped red onion and sliced mushrooms until they are softened, about 5-7 minutes. Add the chopped tomatoes and cook for an additional 2-3 minutes.

    Add Spinach

    Add the baby spinach to the skillet with the sautéed vegetables. Cook until the spinach is wilted, about 2-3 minutes. Stir occasionally.

    Prepare the Vinaigrette

    In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, salt, and black pepper. Add the crumbled bacon to the vinaigrette and mix well.

    Cook the Eggs

    In a separate skillet, cook the eggs according to your preference (scrambled, poached, or fried). Season with salt and pepper.

Serving

    Plate the Dish

    Serve the warm spinach and vegetable mixture on a plate. Top with the cooked eggs and drizzle the bacon vinaigrette over the top. Enjoy warm!
