For the Verlasso Salmon

Prepare the Salmon
Season the Verlasso salmon fillets with salt and black pepper on both sides.

Sear the Salmon
In a large skillet, heat olive oil over medium-high heat. When the oil is hot, add the seasoned salmon fillets skin-side down. Cook for about 4-5 minutes until the skin is crispy, then flip and cook for an additional 3-4 minutes until the salmon is cooked through. Remove from heat and serve with lemon wedges.
For the Braised Red Cabbage

Sauté the Cabbage
In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the shredded red cabbage and sauté for about 5 minutes until slightly softened.

Add Remaining Ingredients
Stir in the apple cider vinegar, sugar, salt, ground cinnamon, and water. Bring to a simmer.

Braised Cabbage
Cover the pot and reduce the heat to low. Allow the cabbage to braise for about 30 minutes, stirring occasionally until tender and flavorful.
For the Apple Vinaigrette

Combine Ingredients
In a small bowl, whisk together the apple cider vinegar, Dijon mustard, honey, and olive oil until well combined.

Season the Vinaigrette
Add salt and black pepper to taste, adjusting the seasoning as desired. Set aside until ready to serve.
