    Prepare the Vegetables

    Wash and peel the potatoes, then cut them into small cubes. Remove the stems and seeds from the red bell peppers and chop them into small pieces.

    Cook the Bacon

    In a large skillet, cook the bacon over medium heat until crispy. Once cooked, remove from the skillet and let it cool on a paper towel. Crumble the bacon into small pieces.

    Cook the Potatoes

    In a large pot, bring water to a boil. Add the cubed potatoes and cook for about 10-12 minutes, or until they are fork-tender. Drain and set aside.

    Cook the Corn and Peppers

    In the same pot, add the corn kernels and chopped red bell peppers. Cook for about 5-7 minutes until the vegetables are tender.

    Blend the Ingredients

    Using a blender or immersion blender, combine the cooked potatoes, corn, and red peppers. Add the heavy cream, salt, black pepper, and smoked paprika. Blend until smooth and creamy.

Finishing Touches

    Add Bacon

    Stir in the crumbled bacon into the purée, reserving some for garnish if desired.

    Transfer the smoked corn purée to a serving bowl and garnish with remaining bacon crumbles. Enjoy warm!
