Method

Roasting the Beets

    Prepare the Beets

    Preheat your oven to 400°F (200°C). Wash the beets thoroughly and trim the tops and roots. Wrap each beet in aluminum foil and place them on a baking sheet.

    Roast the Beets

    Drizzle olive oil over the wrapped beets and sprinkle with salt and black pepper. Roast in the preheated oven for about 45-60 minutes, or until tender when pierced with a fork.

    Peel the Beets

    Once roasted, let the beets cool slightly before unwrapping. Use gloves to peel the skin off, then slice into wedges or rounds.

Making Herbed Goat Cheese

    Mix Ingredients

    In a bowl, combine the Capriole goat cheese, minced garlic, chopped fresh herbs, salt, and black pepper. Mix well until all ingredients are fully incorporated.

    Chill the Mixture

    Cover the herbed goat cheese mixture and refrigerate for at least 30 minutes to allow the flavors to meld.

Making Candied Walnuts

    Combine Ingredients

    In a saucepan over medium heat, combine the sugar, water, and cinnamon. Stir until the sugar dissolves.

    Add Walnuts

    Add the walnuts to the saucepan and stir to coat. Cook for about 5-7 minutes until the walnuts are golden and the sugar mixture becomes syrupy.

    Cool the Walnuts

    Remove from heat and spread the candied walnuts on parchment paper to cool completely before breaking apart.

Preparing the Gastrique

    Combine Ingredients

    In a small saucepan, combine the sugar, red wine vinegar, orange juice, and a pinch of salt.

    Cook the Mixture

    Heat over medium heat, stirring until the sugar dissolves. Allow to simmer for about 10-15 minutes until it thickens slightly.

    Cool the Gastrique

    Remove from heat and let the gastrique cool before using.
