Prepare Vegetables

Prepare the Eggplant
Slice the eggplants into 1/2 inch thick rounds, sprinkle with salt, and let them sit for about 30 minutes to draw out moisture. Rinse and pat dry.

Prepare the Potatoes
Peel the potatoes and slice them into 1/4 inch thick rounds. Set aside.
Make Mushroom Ragú

Sauté Vegetables
In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, and sauté until soft and translucent, about 3-4 minutes.

Add Seasonings
Stir in tomato paste, oregano, salt, and black pepper. Cook for another 2 minutes until well combined.

Finish the Ragú
Pour in the vegetable broth and let the mixture simmer for 10 minutes until slightly thickened. Remove from heat.
Prepare Chipotle Colby Mornay Sauce

Add Milk
Gradually whisk in milk, ensuring there are no lumps. Continue cooking until the sauce thickens, about 5-7 minutes.

Add Cheese and Seasoning
Remove from heat and stir in shredded Chipotle Colby cheese, nutmeg, and salt to taste until the cheese is melted and smooth.
Assemble and Bake

Layer Ingredients
In a large baking dish, layer half of the eggplant slices, followed by half of the potato slices, and half of the mushroom ragú. Repeat the layers and finish with the Mornay sauce on top.

Bake Moussaka
Preheat the oven to 180°C (350°F). Bake the assembled moussaka for 45-50 minutes until golden and bubbly.

Cool and Serve
Let the moussaka cool for about 10 minutes before slicing. Serve warm.
