Duck Breast

    Prepare the Duck Breast

    Score the skin of the duck breasts in a crisscross pattern, being careful not to cut into the meat. Season both sides with salt and black pepper.

    Sear the Duck

    In a skillet, heat olive oil over medium heat. Place the duck breasts skin-side down in the skillet and sear for 6-8 minutes until the skin is golden brown and crispy. Flip the breasts and cook for an additional 3-4 minutes.

    Finish Cooking

    Transfer the seared duck breasts to a baking dish and finish cooking in a preheated oven at 375°F (190°C) for about 10-15 minutes, or until the internal temperature reaches 135°F (57°C) for medium rare.

Braised Red Cabbage

    Sauté the Onion

    In a large pot, melt the butter over medium heat. Add the thinly sliced onion and sauté until soft and translucent, about 5 minutes.

    Add Cabbage and Seasonings

    Add the shredded red cabbage to the pot and stir well. Then add the apple cider vinegar, brown sugar, salt, black pepper, and caraway seeds. Stir to combine.

    Braised Cabbage Cooking

    Cover the pot and reduce the heat to low. Let the cabbage braise for about 45 minutes, stirring occasionally until tender.

Plum Glaze

    Prepare the Glaze

    In a saucepan, combine the plum jam, soy sauce, minced garlic, grated ginger, and water. Stir well to combine.

    Simmer the Glaze

    Bring the mixture to a simmer over medium heat. Cook for about 10-15 minutes until slightly thickened, stirring occasionally.
