Lemon Preparation

    Wash and Prepare Lemons

    Thoroughly wash the organic lemons under cold running water to remove any dirt or pesticides. Pat them dry with a clean towel.

    Peel Lemons

    Using a vegetable peeler, carefully peel the lemons, avoiding the white pith, which can impart bitterness. Collect the yellow peels in a bowl.

    Juice Lemons

    Cut the lemons in half and juice them, reserving the juice in a separate bowl. Strain the juice to remove seeds and pulp.

Infusion Process

    Combine Ingredients

    In the glass jar, combine the lemon peels and high-proof vodka. Seal the jar tightly and shake gently to mix.

    Infuse Mixture

    Store the jar in a cool, dark place for 40 days. Shake the jar gently every few days to agitate the mixture.

    Make Lemon Syrup

    After 40 days, in a saucepan, combine the granulated sugar and water. Heat over medium heat, stirring until the sugar is fully dissolved. Allow to cool.

    Strain Infusion

    After 40 days, strain the lemon vodka mixture through a strainer into a clean bowl to remove the peels.

    Combine Syrup and Infused Vodka

    Mix the strained lemon vodka with the cooled lemon syrup in a large bowl. Stir well to combine.

    Bottle and Store

    Using a funnel, pour the limoncello into clean bottles for storage. Seal tightly and store in the freezer for a refreshing drink.
